Resumen:
The document presents improvements for warehouse and inventory management in the potato warehouse “Surtipapa” in Popayán, Cauca, focused on retail and wholesale. It began with an analysis of the current processes, identifying deficiencies through an Ishikawa diagram. As a solution, it is recommended to implement the FIFO methodology to optimally manage the inventory of perishable products, prioritizing the location of the oldest packages in accessible areas for their dispatch. In addition, it is suggested that App Sheets be adopted as an inventory management tool to improve control, traceability and accuracy in the recording of inputs, outputs and stocks. This methodology integrates qualitative and quantitative approaches. Efficient management is essential to optimize warehouse operations, reduce losses due to damaged products and guarantee the quality of the potatoes marketed.
